Okay, so I love sausage rolls. Love them. And one is never enough for me – I can easily eat several in one go. Not great for the waistline but they’re delicious. And they make for perfect party food, appetisers, lunch boxes or even just for a treat. And homemade sausage rolls are even better, particularly when you eat them fresh out of the oven.

This is an easy homemade sausage roll recipe
So the reason these are easy mini sausage rolls is that I use readymade puff pastry for this recipe. Shop-brought puff pastry is such good quality and cuts down the cooking time. And because you can now buy it ready-rolled, you only have to take it out of the packet and it’s good to go.

Choose quality sausages
This is where you can go for sausages that you love the taste of. There are so many sausage varieties – plain pork, Cumberland, garlic, pork and onion… I have chosen Lincolnshire here – one of my favourites. If you can, choose the best quality sausages that you can buy. It will make all the difference. And then you just have to remove the skin, so you’re just left with the sausage meat.
How to make mini sausage rolls
The step for these sausage rolls is simple. Take out the pastry and then cut the square in half – so you have two strips of pastry. I like to use Dijon mustard for a bit of a kick. So by using a brush, I spread some onto the puff pastry strips before laying out three sausages across each strip.

I then like to sprinkle some mixed hers on top. Just to add a little extra flavour. If you don’t want extra herbs you can leave them out. Then using some egg wash, brush the top end and then from the bottom end, roll upwards. You’ll find that this is easy as you take it slowly.

Then using the tines of a fork, or even just a finger, press down on the join so that they will stay together when they bake. Before putting them in the oven, you want to egg wash the rolls and then equally slice them so you have mini sausage roll pieces. You can choose whatever size you like! I like them bite-sized but I know my husband likes them bigger and he complains when I make them too small.

Can you add other ingredients?
Absolutely. Go for any combination of flavours you like. For instance, if you don’t like mustard, you can use ketchup or chutney. I know that people love using cranberry sauce for Christmas homemade sausage rolls. You could also sprinkle cheddar cheese inside for cheesy sausage rolls. This is the beauty of this recipe. Adapt as you please.
Can you freeze these sausage rolls?
Yes. You can make these ahead of time, bake them and then freeze them by wrapping them up or putting them in a suitable container. Then you can reheat them in the oven from frozen. Leftovers (if you have any) can be kept in the fridge for up to 3-4 days.


Easy mini sausage rolls
Ingredients
- 320 g pack ready-rolled puff pastry
- 6 thick good quality, pork sausages
- 1 egg beaten
- 1 tablespoon mixed herbs
- 1 tablespoon Dijon mustard or ketchup
Instructions
- Preheat the oven to 180c.
- Slice the pastry in half lengthways so you have two long lengths.

- Remove the skins from the sausages. You do this by using a sharp knife and slicing just the top layer of the sausage. They should come away easily.

- Using a brush or the back of a spoon, spread the middle of each pastry strip with some Dijon mustard.
- Line up half of the sausages along the middle of one of pastry strips. If they don’t stretch across the length of the pastry, you can gently stretch the meat.

- Repeat with the other length of pastry.
- Sprinkle some mixed herbs over the sausage meat.

- Brush the top length of each of the two pastry strips with egg wash and roll up the sausage rolls from the bottom of the strip.
- Turn the sausage rolls over and seal the seams with a fork.

- Brush the tops with egg wash and slice the length into mini sausage rolls – try and get them as equal as possible.
- Place the sausage rolls on the baking tray and prick the top of each sausage roll with a knife. This will let any steam escape.
- Bake in the oven for 15-20 minutes – until the pastry is golden brown. Keep an eye, you don't want to burn them.
- Take out of the oven and leave to cool a little.
- You can serve warm or cold.
