If you don’t want to use a ladle, here’s a tip to get perfectly round pancakes. Use a turkey baster! Suck up the batter in a turkey baster and then squeeze it into the frying pan. I promise you’ll get round, fluffy pancakes every time. 

I don’t know why pancakes feel such a treat for us – but when I make them, it’s great to see the family tucking into big platefuls of fluffy pancakes laden with their favourite toppings. With this easy pancake recipe, though, it’s so easy to whip up a batch in no time. If you love tasty brunches, then you have to make these American pancakes.  

Recipe on how to make pancakes

You don’t need many ingredients when you want to make pancakes from scratch. In fact, I bet you’ll have most of them in your pantry or cupboards at home. All you need for this pancake mix is:

  • plain flour
  • baking powder
  • caster sugar
  • eggs
  • milk
  • olive oil
  • salt

And it’s just a case of pretty much throwing all the ingredients above into a big mixing bowl and whisking until you get a smooth, lump-free batter. Then heat a non-stick frying pan over a medium heat and add some olive oil [or melted butter if you’d prefer] and then add a ladleful of batter. The key here on how to make pancakes is to make sure the underside is cooked before flipping the pancake over.

You’ll start seeing bubbles popping up – around 2 minutes. Keep repeating the process until you’ve used up all the batter. You can keep them warm in the oven or in tin foil. If you have a frying pan big enough, you can make two pancakes at the same time.

How to make pancakes thick…

I find it a little more straightforward to cook the pancake mixture when it’s slightly runnier. It’s easier to ladle the batter into the pan and create lovely round circles. However, if you want to know how to make pancakes American, then they can be much thicker if you reduce milk content by about 50-6omls. You’ll have a really lovely thick batter that will rise and become much fluffier. 

What to serve with these pancakes

The beauty of these easy pancakes is you can serve them with absolutely anything. My children adore banana and Nutella pancakes. Slice up some bananas, get two tablespoons of Nutella and heat in a microwave for 45 seconds then loosen with a splash of milk. You’ll have Nutella chocolate sauce in an instant.

I like my pancakes with blueberries, drizzled in honey and a big dollop of Greek yoghurt on the top. Or if I have strawberries, I also throw them on. If you want to go American-style, you could smother the pancakes in maple syrup with a knob of butter and serve them alongside crispy bacon.

Super easy American pancake recipe

Whip up these quick and easy pancakes. Perfect for breakfast and brunch, top them with fruit and honey, maple syrup and butter, or even Nutella and banana.

Ingredients
 
 

  • 270 g of plain flour
  • ½ tsp salt
  • 2 teaspoons of baking powder
  • 2 tablespoons of caster sugar
  • 350 mls of milk
  • 2 large eggs lightly beaten
  • 2 tablespoons of olive oil and more for frying

Instructions
 

  • Get a large bowl and add the flour, salt and caster sugar. In a separate bowl or jug, whisk together the egg, milk and oil.
  • Pour the milk and egg mixture into the flour and, using a whisk or fork, beat until you have a smooth batter. Keep mixing until any lumps disappear. Let the batter stand for a few minutes.
  • Heat a non-stick frying pan over a medium heat and add some olive oil. When it's hot, add a ladle of batter. Wait until the top of the pancake begins to bubble, then turn it over and cook until both sides are golden brown and the pancake has risen.
  • Repeat the process until the batter is used up. I keep the pancakes warm in some tin foil while I am making the other pancakes.
  • Serve with honey and blueberries, topped with yoghurt, or bananas and chocolate sauce.
