Easy spicy peanut noodles

These spicy peanut noodles are a quick and easy meal that's packed with flavour and takes no time at all.

Ingredients

  • 400 g knife-cut noodles or noodles of your choice
  • 3 tbsps peanut butter of your choice
  • 2 tbsp light soy sauce
  • 1 tbsp dark soy sauce
  • 1-2 tbsp garlic chilli oil
  • 1-2 tsp chilli flakes optional
  • 2 tbsp Chinese black vinegar or rice vinegar/cider vinegar
  • 4 tbsps water or more if needed
  • 1-2 spring onions chopped
  • 2-3 tsps sesame seeds for garnish

Instructions

  • Bring a pot of water to the boil
  • Prepare the sauce. In a bowl, add the soy sauce, Chinese black vinegar, peanut butter, garlic chilli oil, chilli flakes and water
  • Using a fork or small whisk, mix the peanut chilli sauce well, until it's a smooth consistency. You can add a little more water if you need to loosen the mixture
  • Cook the noodles according to the packet instructions, for knife-cut noodles around 1-2 minutes
  • Drain the noodles, then immediately add to the peanut sauce and combine
  • Make sure all the noodles are coated in the sauce
  • Divide into bowls, sprinkle over spring onions and sesame seeds
  • Drizzle with extra chilli oil/and or some sesame oil
