Leftover turkey soup recipe

If you have tons of leftover turkey and want an easy, comforting meal then this leftover turkey soup is a winner for the whole family.

Ingredients

  • 500g leftover cooked turkey If you have the carcass, I would recommend adding this too - it really adds to the flavour
  • 1.5 litres of water You may want to add more while the soup is cooking
  • leftover roast potatoes Or peeled and chopped potatoes if you don't have any left
  • leftover carrots
  • leftover cauliflower cheese
  • 200ml leftover gravy
  • 150g frozen peas
  • 1 pinch of salt for seasoning
  • 1 pinch pepper for seasoning

Instructions

  • Get a deep large pot and add 1.5 litres of water - more if you need to fill the pot. Put it on a low simmer.
  • Carefully add the turkey, vegetables, gravy and any other meat to the water and then bring to the boil.
  • Once the water is boiling, turn to a low heat and simmer for an hour, before checking the water level and giving the soup a stir. Skim off any scum/foam that has formed on the top.
  • At this point add the potatoes and cook for another half an hour before adding any frozen peas or sweetcorn. You can simmer for another half an hour.
  • If you've used the carcass now is the time to carefully remove the bones. You can also skim the final layer of the soup. Add seasoning to taste before serving ladles of soup into bowls.

Notes

As you can see I haven't included precise measurements for many of the ingredients because that's the beauty of leftover soup - you throw everything that you have in! There really is no wrong or right, don't worry about it. It will all taste simply amazing.
