Slow cooker chicken chow mein

This is an super tasty, and super easy chicken chow mein recipe. But instead of stir-frying in a wok, you can chuck all the ingredients into a slow cooker.

Ingredients

  • 640 g chicken thighs
  • 1 tablespoon dark soy
  • 2 tablespoons light soy
  • 1 tablespoon oyster sauce
  • 1 tablespoon hoisin sauce
  • 2 tablespoons rice wine vinegar or apple cider vinegar, white wine vinegar
  • 3 cloves garlic crushed
  • 1 tablespoon ginger paste
  • 100 ml chicken stock
  • 1 tablespoon cornflour
  • Handful bean sprouts
  • 350 g egg noodles I use ready-to-cook noodles
  • 2 spring onions chopped

Instructions

  • Mix the cornflour into the stock until dissolved.
  • Then add all the ingredients except the noodles, bean sprouts and spring onions into the slow cooker.
  • Give it all a stir and cook on low for 4-5 hours.

  • 15 minutes before serving, add the noodles and the bean sprouts and combine. I like to use tongs, as I find it easier to mix all the ingredients together.
  • Sprinkle with spring onions, serve and enjoy.

Notes

If you want to add more vegetables, add them around 10-20 mins before you serve, including shredded carrots, peppers, and mushrooms. You don't want the veggies to become too mushy.
