  • Add your Italian/pork sausages with their outer skins removed, and using a spoon, break up the meat.
  • Add the pancetta and continue to cook, so the meat starts to brown.
  • Then add the garlic and dried oregano, and continue to cook for another 1-2 minutes, to let the flavours infuse.

  • Then carefully pour in the chicken stock, making sure to use the spoon to lift off any bits at the bottom of the pan.
  • Bring to a simmer, and then add the uncooked pasta. Give all the ingredients a good stir, and make sure all the pasta is submerged in the liquid. Simmer for around 10 minutes [or according to packet instructions, depending on what type of pasta you've used], making sure to stir several times while cooking.*
  • Once the pasta is al dente, and nearly cooked through, reduce the heat and then add the cream, stirring through and making sure the pasta is coated and the sauce becomes smooth.

  • Season with salt and pepper, and cook for a few minutes more.
  • Before serving, sprinkle fresh parsley and gated parmesan if using.

Notes

*  If you think the pasta needs more liquid, then add some more hot water as it's cooking. Do not add the cream until the pasta is nearly cooked, otherwise, there is a chance the cream can curdle - which is why the heat should be turned down at this stage.
