What are funeral potatoes?
Don’t let the sombre name put you off. Cheesy funeral potatoes are a classic oven-baked [casserole] dish from the USA – and are synonymous with comfort. Funeral potatoes can be prepared and cooked pretty quickly, so they’re often made for family or friends of someone who has recently passed away. Because they’re so easy to eat and made with care – funeral potatoes signify kindness. After all, cooking is the last thing people want to do when they’re experiencing grief, pain and loss.
How to make this cheesy potato recipe
The ease of these cheesy potatoes is what makes this such a wonderful recipe that can be whipped up quickly and easily. And even better, you can use frozen readymade crispy potato squares that can be brought in most supermarkets. What’s more, you don’t have to defrost them beforehand. Combine 6 tablespoons of melted butter, sour cream, garlic and onion powder, seasoning and cream of chicken soup. Then stir in the potatoes, grated cheese and add to an ovenproof baking dish. Using a rolling pin, crush the cornflakes into smaller breadcrumb-like pieces and combine them with the remaining melted butter, before sprinkling them over the top of the potatoes. Then bake in the oven for 40-50 minutes until crispy and golden on top.

These funeral potatoes are the perfect accompaniment to so many main dishes including roasted meats such as roast chicken or ham. You can even make these potatoes as a side dish for steaks or pork chops. Great for family dinners or for entertaining, you won’t go wrong serving these. And if you’re a potato fiend like myself, then I could quite easily eat a bowl of these on their own!
Can I make this funeral potato recipe in advance?
Absolutely. Make the potatoes up until the cornflakes stage, then cover and refrigerate for up to 48 hours before adding the topping and baking in the oven for 40-45 minutes. If you want to freeze the funeral potatoes, do the same as the make-ahead method, freeze for up to three months in a suitable container, then defrost thoroughly for 24 hours before adding the cornflakes and baking.
Ultimate cheesy potatoes [funeral potatoes] recipe
Ingredients
- 900 g bag of frozen crispy potatoes
- 500 ml of sour cream
- 1 400 g can of cream of chicken soup
- 1/2 teaspoon of salt
- 1/4 teaspoon of pepper
- 1 teaspoon dried onion powder
- 1 teaspoon of garlic powder
- 140 g of melted butter divided
- 200 g grated cheddar cheese
- 250 g of cornflakes crushed
Instructions
- Preheat oven to 200c (320F).
- In a large bowl, combine the sour cream, chicken soup, 6 tablespoons of melted butter, salt, pepper, garlic powder and onion powder. Make sure to mix well.
- Next, add the potatoes and grated cheese and stir to combine.
- Then add the potato and cheese mixture in an ovenproof dish.
- In the meantime, put the cornflakes into a freezer bag and, using a rolling pin smash the cornflakes into fine pieces – similar to breadcrumbs.
- Add remaining 4 tablespoons of melted butter to the crushed cornflakes and combine well. Then evenly sprinkle the cornflakes over potatoes.
- Bake in the oven uncovered for 40-50 minutes, until golden brown on top.
