Slow cooker beef and chorizo stew

This slow cooker beef stew is a hearty, healthy and filling dish that the whole family will enjoy - and so easy to make.

Ingredients

  • 1 onion finely chopped
  • 2 garlic cloves finely chopped
  • 1 large carrot peeled and diced
  • 2 tins of plum tomatoes or chopped tomatoes
  • 800 g of stewing beef
  • 300 g chorizo cut into pieces
  • 1 tsp of paprika
  • 1 tsp of dried mixed herbs
  • 1 tsp Worcestershire sauce
  • 1 beef stock pot or cube

Instructions

  • Add the chopped onion and garlic to the slow pot.
  • Then add the carrots, chorizo and stewing beef.
  • Add a splash of Worcestershire sauce, the mixed herbs and the stockpot or if you have stock cube, crumble it.
  • Add the tinned tomatoes.
  • Then mix it all thoroughly, breaking down the tomatoes if you've used plum tomatoes.
  • Cover and cook.
  • When you're ready to serve, if you feel the sauce needs thickening, you can add cornflour paste to the stew to thicken it or pop the stew onto the stove and let it reduce on a medium heat for 10 minutes.
  • Serve with couscous, rice or mashed potatoes and garnish with freshly chopped parsley.
