One of the best kitchen appliances my mum brought me was a slow cooker. There are an infinite amount of dishes you can do in them – and without little effort. That’s the beauty of slow cooking – you can have a homemade meal served up for dinner or for entertaining, without having to slave over a hot stove. And I am all about simplicity without cutting corners or losing taste.
This beef stew slow cooker recipe is perfect for the whole family. Throw all the ingredients into the slow cooker, without having to cook a single item, and leave it for 8 hours on low. By the time you’re ready to eat, you’ll have a delicious beef and chorizo stew, with meat that just falls apart.

If you love Spanish flavours then this beef stew slow cooker recipe really will tick all the boxes. And it only contains six ingredients – an onion, two cloves of garlic, a carrot, chorizo, tinned tomatoes and pieces of stewing beef. For flavour, all you need to add is a dash of Worcestershire sauce, some dry mixed herbs, paprika and a beef stock cube or stockpot. Give it all a good stir, put the lid and let the slow cooker do the rest of the work. If you’re in more of a rush, turn the cooker on high and the stew should be cooked in around 4-5 hours – although you may find the beef might not be as tender.
What if I don’t have a slow cooker?
Not to worry, you can still make this beef and chorizo stew. Put all the ingredient into a casserole dish with a lid, and pop it into a preheated oven for around 150c. You won’t need to cook it in the oven for as long – perhaps two hours or until the beef is soft. You may also need to add more liquid, as it will evaporate in the oven. Reserve one of the empty tins of tomatoes and fill with water. Add to the stew when needed.

Can I add other vegetables to the beef stew?
Yes. Raid the fridge and use up leftover vegetables if they’re to hand. You could chuck in peppers, celery, sweetcorn or peas. You could even add spinach or pieces of aubergine or courgette. Carrots work really well in this beef stew slow cooker recipe as their sweetness compliments the tang of the chorizo and tomatoes. Don’t be shy, just add a little bit of what you fancy. And if you don’t have beef, you could substitute it for chicken thighs or breast – white meat would also work in this recipe.
What can I serve with this beef and chorizo stew?
We always like to serve this stew with couscous – it works really well with it and I find it not as heavy as rice. The couscous also soaks up all the sauce and makes it heavenly to eat. You can serve it with fresh hunks of bread, rice, mashed potatoes – the choice is completely up to you. What I will guarantee is that you will enjoy this delicious slow cooker beef stew with anything.

Slow cooker beef and chorizo stew
Ingredients
- 1 onion finely chopped
- 2 garlic cloves finely chopped
- 1 large carrot peeled and diced
- 2 tins of plum tomatoes or chopped tomatoes
- 800 g of stewing beef
- 300 g chorizo cut into pieces
- 1 tsp of paprika
- 1 tsp of dried mixed herbs
- 1 tsp Worcestershire sauce
- 1 beef stock pot or cube
Instructions
- Add the chopped onion and garlic to the slow pot.
- Then add the carrots, chorizo and stewing beef.
- Add a splash of Worcestershire sauce, the mixed herbs and the stockpot or if you have stock cube, crumble it.
- Add the tinned tomatoes.
- Then mix it all thoroughly, breaking down the tomatoes if you've used plum tomatoes.
- Cover and cook.
- When you’re ready to serve, if you feel the sauce needs thickening, you can add cornflour paste to the stew to thicken it or pop the stew onto the stove and let it reduce on a medium heat for 10 minutes.
- Serve with couscous, rice or mashed potatoes and garnish with freshly chopped parsley.
