Yummy banana bread with Nutella

Don’t you just hate it when there is a pile of sorry-looking brown bananas sitting in the fruit bowl? No matter how many bananas we use up or eat, there always seem to be a few left and after the kids have turned their noses up at them, I am loathed to throw them out. So an easy banana loaf bread recipe is just the perfect way to use them up. But even though we all love a moist banana loaf, this cake takes it to another level! Why wouldn’t you combine banana bread with Nutella?

The ultimate banana bread with Nutella

A gorgeous mix of sweet bananas with the chocolatey hazelnut velvetiness of Nutella, this banana bread recipe is so easy to make it’s pretty much fool-proof. While some banana bread recipes use butter in the batter, this recipe uses vegetable oil, which makes this banana and Nutella cake so moist, soft and so unbelievably moreish. Perfect for afternoon tea, lunch boxes, and a sweet treat at any time!

How to make this loaf cake?

After mashing very ripe bananas (they need to be really soft), add them to vegetable oil, sugar, and eggs. Combine thoroughly. Then add the flour and the baking powder. Your banana bread batter is nearly there. Take the Nutella and put it in a suitable bowl, and microwave on high for 10-15 seconds. At this point, the Nutella should be mixed well and will be a much looser consistency. 

Take a third of the banana bread batter and mix it with the Nutella. Then get a prepared greased lined loaf tin and spoon both the mixtures in and use a knife or skewer to swirl the two mixtures together. This is a wet cake mixture, so will need baking for a while. The baking powder acts as a raising agent and you will see the cake rising well in the oven. It will take around 45 minutes – but you may need a little longer, just make sure a skewer inserted into the middle comes out clean.

Can the Nutella be left out?

Yes, this is a classic easy banana cake recipe. So if you don’t have any Nutella at home and want a plain banana loaf, follow this recipe and just skip the Nutella part. You could even substitute the Nutella for peanut butter. Whatever you decide to do, it will taste amazing – promise.

How to store this cake

This banana bread keeps really well, so cover and keep on the counter or an airtight container for up to three days, or in the fridge for a few days longer. You could also freeze the whole cake, wrap it well in clingfilm and foil and freeze for up to three months. Thaw overnight at room temperature and then serve and enjoy.

Ingredients
 
 

  • 3 very ripe bananas
  • 3 large eggs
  • 200 g Nutella
  • 100 g soft light brown sugar
  • 150 ml sunflower vegetable oil
  • 300 g self-raising flour
  • 1 tsp baking powder

Instructions
 

  • Preheat the oven to 160c (fan oven) and grease and line a loaf tin with baking paper.
  • In a large bowl, mash the bananas with a fork or a potato masher. Then add the eggs, sugar and oil. Using a whisk, combine well.
  • Then add the flour and baking powder and whisk together until thoroughly mixed.
  • Put the Nutella in a bowl and microwave for 10-15 seconds on a high heat until it loosens and is more liquid-like.
  • Take 1/3 of the banana bread batter and mix well with the Nutella.
  • Pour the banana bread batter into the tin. Then put spoonfuls of the Nutella mixture into the mixture and using a skewer and swirl and mix the two batters. If you want more of a marble effect, then put spoonfuls of each batter in alternately before swirling. Bake for 45 minutes, or until the cake has well risen and a skewer inserted into the centre comes out clean.
  • Cool in the tin for 10-15 minutes, then turn out onto a wire rack to cool completely. Slice and serve.
