Simple no bake chocolate cheesecake

By combining just a few simple ingredients, it is possible to create a sublime dessert – and this no-bake chocolate cheesecake is no exception. This cheesecake is creamy and rich and combined with a deep caramel crunchy base of Lotus Biscoff, it really is delicious. A real treat, so there’s no need to count the calories on this one!

If there’s one dessert that will impress, then this is it! Perfect for a family treat or when you’re entertaining friends. And the best thing about this no-bake cheesecake is that it can be prepared in a matter of minutes. The hardest part is having to wait for it to chill in the fridge for at least three to four hours.

Simply crush the Lotus biscuits, either in a food processor or using a food bag and rolling pin, and then combine them with melted butter and cocoa powder and press well into a 20cm springform tin. 

Meanwhile, you just have to whip the cream cheese and double cream, alongside the vanilla essence, and add melted chocolate. The key here is to whip the cream so that it begins to form soft peaks. Don’t overwhip it or it will become too stiff to manage. So go slow and steady with the beaters. 

If you find that you have overwhipped the cream mixture add a tablespoon of milk a bit at a time to loosen it. 

Once you’ve poured into the cake tin and smoothed the top with a palette knife, it’s time to forget about it for several hours – or preferably overnight.

How to decorate this chocolate cheesecake

This cheesecake is a perfect choice if you’re looking for an Easter recipe. My kids love Easter treats, which is why I opted for KitKat chocolate bunnies for this no-bake chocolate cheesecake. I’ve also decorated it with chocolate mini eggs – they add a touch of colour. You could even use Maltesers or chocolate buttons – basically, any chocolate you fancy!

From grated white and dark chocolate, chocolate chips or sprinkles to pieces of fruit including strawberries and raspberries, the choice is endless. Have fun playing around. 

Can you freeze it?

Absolutely. This cheesecake really is such a good option if you’re entertaining. You could make this cheesecake well in advance of your event and put it in the freezer whole. Place it onto a suitable dish and then wrap well with clingfilm – it can be frozen for up to three months. When you’re ready for it, let it thaw at room temperature for about four hours before decorating and serving, or in the fridge overnight.

Easy no bake chocolate cheesecake

Ingredients
 
 

  • 200 g Lotus Biscoff biscuits
  • 1 tbsp cocoa powder
  • 90 g unsalted butter melted
  • 300 g dark chocolate
  • 400 g cream cheese
  • 200 g double cream
  • 2 tsp vanilla essence
  • 2 bags of KitKat chocolate bunnies

Instructions
 

Biscuit base

  • Line a 20cm springform tin.
  • Put the Lotus biscuits in a food processor and blitz until they are crumbs. If you don’t have a processor, pop the biscuits in a sealed food bag and break them with a rolling pin.
  • Melt the butter in a pan on a medium heat, or in the microwave in a suitable container. Make sure to cover, as the butter will splutter.
  • In a large bowl. combine the Lotus biscuit crumbs with the melted butter and the cocoa powder. Once mixed well, press the crumbs into the springform tin and then pop into the fridge so the base can begin to set.

Chocolate cheesecake filling

  • Break the dark chocolate into pieces and place into a bowl. Microwave for around 3 mins, stirring regularly, until the chocolate has melted.
  • In a large bowl, combine the cream cheese, double cream and vanilla essence and whisk with electric beaters or in cake mixer – but not too fast. You want the cream to just start getting firm and with soft peaks. Pour in the melted chocolate and fold through.
  • Remove the tin from the fridge and put the cream cheese filling into the tin, and smooth the top evenly with a palette knife.
  • Put the tin back in the fridge and chill for at least 3-4 hours before serving, or overnight.

Decoration

  • Once you’re ready to serve, you can decorate with chocolate eggs, Easter bunnies, fresh raspberries or strawberries – anything you like!
