Pak choi is such a staple Chinese vegetable that is the perfect accompaniment to so many dishes. But it can also be the star of the show. In this recipe stir-fry the pak choi with sesame oil and lots of garlic.
Cut a thick slice from the pak choi root to separate the leaves. Rinse and drain.
Heat the vegetable oil in a large wok or deep pan over a medium heat. Then add the garlic, soy sauce and pak choi.
Toss the pak choi until coated and put a pan lid over the top. Reduce the heat and cook for 3-4 minutes, tossing the pak choi a few times.
WIth only one minute left to cook, add the sesame oil and stir through.
Before serving, sprinkle some sesame seeds on top.

My mum's top tip: The secret to perfect pak choi is high heat and quick cooking. Don't be tempted to cook it longer - you want those stems crispy, not soggy.Garlic or ginger? I usually use just garlic, but my mum often uses half garlic and half fresh ginger. Both combinations are delicious - try both and see which you prefer.Make it spicy: Add a spoonful of chiu chow chilli oil at the end for a spicy kick. It's one of my favourite variations.Bigger batches: If cooking more than 300g, do it in two batches. Overcrowding the wok makes the pak choi steam instead of stir-fry.
