Ultimate cheesy potatoes [funeral potatoes] recipe

These cheesy funeral potatoes are so easy to make, full of flavour and the ultimate potato dish. Everyone will love them, that's a promise.

Ingredients

  • 900 g bag of frozen crispy potatoes
  • 500 ml of sour cream
  • 1 400 g can of cream of chicken soup
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of pepper
  • 1 teaspoon dried onion powder
  • 1 teaspoon of garlic powder
  • 140 g of melted butter divided
  • 200 g grated cheddar cheese
  • 250 g of cornflakes crushed

Instructions

  • Preheat oven to 200c (320F).

  • In a large bowl, combine the sour cream, chicken soup, 6 tablespoons of melted butter, salt, pepper, garlic powder and onion powder. Make sure to mix well.
  • Next, add the potatoes and grated cheese and stir to combine.

  • Then add the potato and cheese mixture in an ovenproof dish.

  • In the meantime, put the cornflakes into a freezer bag and, using a rolling pin smash the cornflakes into fine pieces - similar to breadcrumbs.
  • Add remaining 4 tablespoons of melted butter to the crushed cornflakes and combine well. Then evenly sprinkle the cornflakes over potatoes.

  • Bake in the oven uncovered for 40-50 minutes, until golden brown on top.

Notes

If you don't have frozen potatoes, you can use fresh potatoes and dice them into cubes. I would recommend parboiling them for around 5 minutes or so and letting them cool before adding them to the sour cream/cheese mixture. Don't worry if they're not fully cooked as they will be going back into the oven again.
