Baked oats recipe with banana and Nutella

When I first saw the viral #tiktok sensation of baked oats, I wanted to try it straight away. And the only ingredients I had at the time to use were bananas and Nutella chocolate spread. So, I thought, why the heck not – this is a pretty good combination. And I was right. After testing it out a few times, my baked oats recipe has now become a firm favourite in my household and the kids always ask for it on the weekend. 

You could also try my fluffy American pancakes recipe or my English pancake recipe with lemon and sugar. 

What are baked oats? 

Forget gloopy porridge. Baked oats are whizzed to a fine consistency alongside several other ingredients to make an oatmeal mixture that, when baked, is more like a cake in texture. So you can essentially eat cake for breakfast and not feel the least bit guilty about it!

Is this a healthy baked oats recipe?

Baked oats in their simplest form are healthy with no refined sugars or fat. However, once you pimp up these baked oats with Nutella, chocolate or any other sweet treats – they won’t be as wholesome to be fair, but as breakfasts go – this one is nutrient-rich and full of flavour.

How to make this Nutella and baked oats recipe

This couldn’t be a simpler baked oatmeal recipe. All you have to do is blend together rolled oats [I like to use Quaker old-fashioned oats], an egg, honey, baking powder, banana, salt and milk. And then add a lovely dollop of Nutella in the middle for a special treat. Then pour into greased ramekins, place on a baking tray and bake in the oven for half an hour. That’s it!

What if I don’t have ramekins?

To serve baked oats individually, ramekins are a perfect size. However, if you don’t have any, you can also bake the oatmeal in a small baking dish or pie dish, and spoon out servings, instead. 

What other combinations can I make?

The base of this baked oats recipe is pretty simple – so the world is your oyster. If you want to make healthier baked oats, don’t add sweet treats like chocolate chips or peanut butter. Don’t have any chocolate but have some caramel? Use that instead. It really is up to you.

The basic recipe  is: 

  • 80g of rolled oats
  • 120mls of milk
  • 1 egg
  • 1/2 teaspoon of baking powder
  • 2 tablespoons of honey
  • 1/2 teaspoon of salt 

You will also need a blender – I have one like this – to make sure the oatmeal mixture is super fine and without any lumps.

Once you’ve blended this oatmeal mixture, you can add anything you like – throw in some blueberries and some freshly squeezed lemon. Stir through some dried fruits, like raisins and chopped apricots with some coconut. You could even use peanut butter, chocolate chips and strawberries or any frozen berries. The choices are endless and the fun part is trying lots of different combinations!

Can you make these ahead of time?

Absolutely. If you want to batch-bake them, double or triple the ingredients. Bake them, and then put them in the fridge, covered with clingfilm for up to four days. Then reheat in the microwave for 3 minutes on high. This is perfect if you want to have a baked oats recipe for one. This way, you’ll have your breakfast sorted for a few days. 

What about freezing them?

You can also freeze these banana baked oats. Just make sure to put them in suitable freezer bags or containers and then defrost them thoroughly, before reheating them in the microwave for 4-5 minutes on high.

Ingredients
 
 

  • 80 g [1 cup] of rolled oats
  • 120 mls [½ cup] of milk
  • 1 ripe banana
  • 1 egg
  • 2 tablespoons honey
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 3 rounded teaspoons of Nutella divided

Instructions
 

  • Preheat the over to 180c
  • In a blender, combine the oats, milk, banana, egg, honey, baking powder, salt, and 1 teaspoon of Nutella. Blend until well combined – around 50 seconds.
  • Pour the baked oats batter into two greased ramekins and spoon 1 teaspoon of Nutella into the middle of each one.
  • Carefully pace on a baking tray and bake for 30 minutes.
  • Remove from the oven, let cool for a few minutes, and enjoy!
  • You can even add a dollop of Greek yoghurt on top and some extra honey.
