While I love chocolate brownies (who doesn’t?), blondies are just as gorgeous, naughty, and nice. This easy blondie recipe also has the added treat of chocolate easter eggs – and while you can use any type, including Cadbury’s Mini Eggs, I opted to use Galaxy’s Enchanted Eggs. I love the rose gold colour and the crunchy caramel chocolate is divine. 

This blondie recipe is perfect as an Easter treat for the whole family and is so simple, the kids will enjoy baking these, too. But these blondies can be enjoyed at any time of the year with or without chocolate eggs. 

How to make this easy blondie recipe

Chewy, soft and so good, these blondies also have a crispy crunch from the chocolate eggs, which add texture. The first step is to melt the butter and combine it with the two different sugars – light brown and caster. It will become a gooey, toffee-like sauce. After whisking the eggs with the salt, you then add to the butter-sugar mixture, and then finally whisk in the flour. That’s pretty much it.

Halfway through baking you carefully add the eggs, and then continue to bake in the oven for a further 10-15 minutes. And leave them to cook in the tin. That’s the hardest part – having to wait. 

Is there a gluten-free option? 

To make these blondies gluten-free, substitute the plain flour for gluten-free flour and you will still have an extremely tasty and scrumptious dessert. Honestly, a batch in our house doesn’t even last 24 hours!

What can be added instead of chocolate eggs?

Anything – you can add nuts including pecans and walnuts, chocolate buttons or chocolate chips, white, dark, milk or a mixture of all three! Just add them to the blondie mixture before baking in the oven. There will be no need to remove the blondie halfway through.

How to store them?

If by some slim chance, you have any blondies left, you can pop them in a Tupperware box and they will keep for a few days. They make great lunchbox treats, too.

These delicious blondies are so easy to make. Embellish them with chocolate eggs and you have the perfect Easter treat

Ingredients
 
 

  • 150 g unsalted butter
  • 150 g light soft brown sugar
  • 100 g caster sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp sea salt
  • 250 g plain flour
  • 1 tsp baking powder
  • 160 g Galaxy Enchanted Eggs or eggs of your choice

Instructions
 

  • Preheat the oven to 180c. Line and grease a 20cm square tin with baking paper.
  • Put the butter in a container and melt in the microwave on a medium heat – make sure to cover as it will splutter.
  • In another bowl, add the light brown sugar and caster sugar, then combine with the melted butter. Whisk well, until the mixture is smooth and glossy.
  • Whisk the eggs, vanilla and salt together in a large bowl. Then add the sugar and butter mixture until all the ingredients are combined. Finally, whisk in the flour and baking powder. Pour into the prepared tin and put the tin in the oven.
  • While the blondie is cooking, chop half the chocolate eggs in half and keep the rest whole.
  • After 25 minutes, take the blondie out of the oven and carefully place the chocolate eggs on top by pressing them into the mixture. Return to the oven for a further 10-15 minutes or until the blondie is golden-brown. This is a gooey mixture, and it will still be quite wobbly – but remember it will continue to cook while it's cooling.

  • Leave the blondie in the tin for at least 20 minutes to cool before cutting into squares. Enjoy!
